Experimental growth kinetics of the four most important flat forms of sucrose crystals has been investigated under varying raffinose concentrations within a range of low supersaturations at 313 K. Both Cabrera-Vermilyea and Kubota models, associated with Langmuir-type equilibrium isotherms are tested to find the more suitable description of the kinetics behaviour in the presence of raffinose.

Abstract
